The "No-Dig" Philosophy on Clay

The EAT-Lancet report stresses reducing agriculture's carbon footprint. Traditional digging (tilling) of heavy clay releases sequestered soil carbon into the atmosphere, destroys delicate mycorrhizal fungi networks, and brings dormant weed seeds to the surface.

How we do it: We lay untreated cardboard directly over the clay and top it with 10-15cm of organic compost. We plant seeds and plugs directly into the compost layer. Earthworms naturally incorporate the compost into the clay over time, creating incredible drainage without turning a single spade of earth.

The climate here is semi-continental. Frosts typically end by late April. The clay holds water beautifully but warms up slowly in spring. Our EAT-Lancet menu focuses heavily on historic Lorraine crops.

Avoid generic garden centers. To maintain the planetary health diet, prioritize organic, heritage seeds that have not been treated with fungicides.

Growing the Moselle Mirabelle

The Mirabellier de Nancy thrives in Argilo-Calcaire clay. Buy as a bare-root tree in November. Plant directly into a wide (not deep) hole in the clay, backfilled with compost. They require minimal pruning and provide massive yields by late August.

We cannot grow everything. The EAT-Lancet diet requires a massive shift away from meat toward plant proteins and healthy unsaturated fats. To maintain planetary health, these staples should be bought in bulk from zero-waste shops to minimize plastic packaging.
